Hey y'all welcome back to Blueberries and Bourbon, the show where I teach beginner chefs how to make exquisite recipes to “wow” their family members without having a lot of knowledge or skills about the kitchen.

Today i had my lovely husband Ty here with me. He's always been my sous chef and my taste tester in the kitchen so this is going be fun.

Alright so today I’m going to be showing you all how to make an apple pie. It is actually my favorite Thanksgiving dessert to make. I know a lot of people like to make sweet potato pie or cherry pie. Let's get started!

[Ingredients]

 Here are the ingredients you're going to need. You'll need six to eight Gala apples, 3/4 a cup of sugar, half a teaspoon of cinnamon, 1/8 of a teaspoon of nutmeg, 3 tablespoons cornstarch, 1 cup of apple cider vinegar or apple juice, 2 tablespoons of lemon juice, a little bit of whole milk and some coarse sugar.

[Steps]

First we're going to make the filling. So in a medium saucepan, you’re going to take your sugar, your nutmeg and your cinnamon and you're going to add it to the saucepan, dry. You're also going to take your cornstarch and add that to the pan. Then you're going to whisk to combine. Once that's thoroughly combined, on a medium-high heat, you're going to add in your apple cider vinegar and lemon juice and then stir to combine. Make sure you get all the lumps out. Allow that to come to a boil until it's thick and goopy.

After a couple of minutes this is what it should look like it should look like. It should be really thick and goopy. Make sure you keep stirring it so it doesn't burn on the bottom of the pan. So it should start to look like this and after about a minute and a half of it being on the stove, we should have this kind of consistency. Next, you’re going to add this to the mixing bowl. Make sure you get it all; you’ll need every drop of this. Now, take this bowl and add it to the fridge to cool.

Next, after you've blanched your apples in the microwave for about two minutes covered in plastic wrap to create a little oven, what you're going to do is you're going to pour your apples into your cold filling and then take your spatula and stir to combine.

Now we’re going to add the mixture to the piecrust in our pie pan. I use the pre-made Pillsbury Dough piecrust because I cannot make a crust to save my life. It’s time for the latticework for the piecrust. The latticework is the checkerboard style piecrust so here we go. So you're going to take your other piecrust as they come in a set of two then you're going to take your pizza pie cutter and you're just going to roll it up onto even strips. Mine don’t come out even because I can never do it so fine. Who cares, it gives it character. You're going to start with your biggest one and you’re going to lie that across. They go across this way. This sets up the basis for the lattice. Just like a braid, you're going to do over under over.

So we'll start that way, we're going to do the same thing with the other side. Now we're just going to fill it on the corners with our leftover dough and then now we need to trim it. Make sure that as you trim, you're pressing the pieces of the pie to the bottom crust so they'll stick together.

Then what I usually do because I have so much leftover dough and I don't want to waste it is you gather up all of your leftover dough and you mash it and roll it into a ball. I like to make little designs for mine but what I usually do is my last initial for my last name you're just going to roll it out. So for me it would be an H and this part is totally optional if you don't want to.

Next what you're going to do is you're going to take your milk that you had set aside and then your coarse sugar, this is the one that I use, and what you're going to do next is you're going to dab your fingers in the milk and just kind of dabble the milk all over the crust. Most people usually do an egg wash and I don't like an egg wash on the pie just because it gives it that like bitter taste and the milk also makes it have that really golden crispy beautiful crust that we're really looking for. Next you're going to take your granulated sugar in your hand and just sprinkle it all over the pie doesn't have to be perfect doesn't have to be even just sprinkling it all over.

Pre-heat your oven to 400 degrees Fahrenheit and you're going to bake it at 400 for 20 minutes and then kick it down to 350 for 30 minutes.
